- 1 (20 oz.) can crushed pineapple
- 1 c. margarine, softened
- 3/4 c. brown sugar
- 3/4 c. granulated sugar
- 4 eggs
- 1 lb. carrots, shredded
- 1 pkg. chopped dates
- 2 tsp. vanilla extract
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
Directions

1Drain pineapple well.

2Beat margarine and sugars until light and fluffy.

3Beat in eggs.

4Beat in pineapple, carrots, dates and vanilla.

5Combine flour, soda, cinnamon and ginger.

6Gradually add flour mixture and beat until well blended.

7Pour batter into greased and floured 13 x 9-inch pan.

8Bake in a 350° oven for 50 to 60 minutes until cake tested in middle comes out clean.

9Cool completely.

10Sprinkle with powdered sugar.
