Date & Fig Salad Dressing

Ingredients

  • 4 figs, chopped
  • 4 dates, chopped
  • 1/4 cup golden raisin
  • 2 large softened garlic cloves
  • 1 cup extra virgin olive oil
  • 1/8 balsamic vinegar
  • 1 dash koshar salt
  • ground pepper

Directions

    Slightly roast or soften garlic first, otherwise too bitter.

    Whirl all the ingredients using a hand held electric blender; mine is a Cuisinart 200 watts Smart Stick that comes with a cup for the ingredients.

    Very thick; experiment with different vinegars (red wine is also good).
