  • 3 eggs, beaten
  • 1 c. sugar
  • 1 c. flour
  • pinch of salt
  • 1 tsp. baking powder
  • 1 c. walnuts, chopped
  • 1 c. dates, chopped
  • 3 c. oatmeal
  • 1 c. Vita Fiber
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 3/4 c. raisins
  • 3/4 c. chopped pitted dates
  • 3/4 c. evaporated skim milk
  • 6 Tbsp. honey
  • 3 egg whites
  • 1/2 c. sugar

    Preheat oven to 350°.

    Spray a 9-inch square baking pan with Pam or Baker's Joy.

    In a mixing bowl, with a fork or whisk, blend oatmeal, Vita Fiber, baking soda, cinnamon, raisins and dates.

    In a small bowl, combine milk and honey.

    Beat egg whites until almost stiff.

    Slowly, about 1/4 cup at a time, add the sugar to the whites and continue to beat until stiff and glossy.
