Ingredients
- 1 cup chopped dates
- 1 cup boiling water
- 1 teaspoon baking soda
- 1 tablespoon butter
- 1 cup brown sugar
- 1 egg, beaten
- 1 cup chopped walnuts (optional)
- 1/4 teaspoon vanilla essence
- 2 cups plain baking flour
- 1 teaspoon baking powder
Directions

1Put dates, boiling water, butter and baking soda into a bowl and stir until butter is melted.

2Set aside for one hour.

3Beat sugar, egg, vanilla essence and walnuts (if using) into date mixture.

4Sift in flour and baking powder and stir until just combined.

5Pour mixture into a greased 22cm loaf tin and bake in a 180C oven for 45 minutes or until inserted skewer comes out clean.

6Leave in tin for about 10 minutes before turning out onto cooling rack.
