Date Nut Bread

Ingredients

  • 1 c. sugar
  • 1 c. chopped nuts
  • 1 tsp. baking soda
  • 1 Tbsp. butter
  • 1/2 lb. dates, cut in thirds
  • 1/2 c. raisins
  • 1 1/2 c. boiling water
  • 2 Tbsp. baking powder
  • 1 tsp. vanilla
  • 2 eggs
  • 2 c. plus 2 Tbsp. flour

Directions

    Mix first 6 ingredients together and put boiling water over mix and let stand for 15 minutes to soften fruit.

    Add baking powder, vanilla, eggs and flour.

    Bakes well in 3 greased tennis ball cans, in 350° oven for 35 to 40 minutes.

    Run knife around edges and remove while still quite hot.

    Can also bake in greased bread pans or muffin tins.
