  • 2 lb. dates, seeded and cut up
  • 2 lb. pecan meats, chopped or broken
  • 2 c. flour
  • 4 tsp. baking powder
  • 2 c. sugar
  • 8 eggs, beaten separately
  • 2 tsp. vanilla

    Sift flour and baking powder over nuts and fruit; mix well, then add sugar.

    Add egg yolks, beaten well.

    Stir vanilla into the yolks.

    Lastly, beat egg whites and mix well.

    Grease pans and line bottoms with paper.

    Fill to top (does not rise much).

    Bake slowly for 2 hours at about 275°.
