- 9 potatoes, peeled and cubed
- 1 Tbsp. butter
- 2/3 c. light cream cheese
- 2/3 c. fat free sour cream
- 2 tsp. onion powder
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Boil a large pot of salted water.

2Drop in potatoes and cook until tender (about 15 minutes).

3Drain potatoes and put in large mixing bowl with 1 tbsp. butter.

4Mix on low speed until potatoes are smooth.

5Mix cream cheese, sour cream, onion powder, salt and pepper and beat on low speed to blend.

6Coat a 9 x 13 in. baking dish with cooking spray.

7Spread potato mixture into the dish and refrigerate overnight.

8Preheat oven to 350°.

9Bake for 30 minutes.
