- 8 slices Bacon
- 8 whole Potatoes
- 8 ounces, weight Cream Cheese, Softened
- 1 cup Sour Cream
- 1/2 whole Onion, Diced
- 8 Tablespoons Butter
- Salt And Pepper, to taste
Directions

1In a large skillet, cook bacon over medium heat until crispy. Remove from heat. Once cooled, crumble the bacon and set aside.

2Peel and then boil potatoes in salted water until they are fork tender. Then drain water. Depending on the size, this will take anywhere from 15 to 35 minutes, so just keep an eye on them. Drain the water and then dice and mash the potatoes.

3In a bowl, beat together cream cheese and sour cream until smooth. Add the mashed or diced potatoes a little but at a time, while continuing to stir. Stir in bacon and onion. Add salt and pepper to taste.

4Place the mixture in a casserole dish and top with several pats of butter.

5Bake at 350F for 30 minutes.
