Ingredients
- 5 medium red potatoes, unpeeled & cubed
- 14 vidalia onion, finely chopped
- 4 sweet gherkins, chopped
- 2 hard-boiled eggs, chopped
- 2 tablespoons crumbled feta cheese
- 4 sun-dried tomatoes, chopped
- 1 cup mayonnaise
- 14 cup sour cream
- salt and pepper
Directions

1Boil the potatoes for 10 mins or until tender ( do not overcook )Drain and cool.

2mix the mayonnaise and sour cream in a large bowl.

3Add all the other ingredients and stir gently to mix.

4season with salt and pepper.

5Refrigerate for an hour before serving.
