  • 5 medium red potatoes, unpeeled & cubed
  • 14 vidalia onion, finely chopped
  • 4 sweet gherkins, chopped
  • 2 hard-boiled eggs, chopped
  • 2 tablespoons crumbled feta cheese
  • 4 sun-dried tomatoes, chopped
  • 1 cup mayonnaise
  • 14 cup sour cream
  • salt and pepper

Directions

    Boil the potatoes for 10 mins or until tender ( do not overcook )Drain and cool.

    mix the mayonnaise and sour cream in a large bowl.

    Add all the other ingredients and stir gently to mix.

    season with salt and pepper.

    Refrigerate for an hour before serving.
