Deep-Dish Apple Pie

  • 10-inch (2-crust) pie pastry
  • 5 c. sliced Granny Smith apples
  • 1/2 c. boiling water
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground cinnamon
  • 2 Tbsp. butter

    Line pie plate with half of the pastry, rolled to 1/8-inch thickness.

    Set aside.

    Cook apples in water in a heavy covered pan 5 or 6 minutes, or until apples are about half cooked.

    Drain and cool.

    Preheat oven to 450°.

    Turn the apples into the pie plate.

    Mix the sugar, salt, nutmeg and cinnamon together. Sprinkle over apples and dot with butter.

    Roll out top crust. Place over apples; trim, turn under bottom crust and flute.

    Cut vents in top.

    Sprinkle with additional sugar.

    Bake 10 minutes before reducing oven to 350°.

    Bake 30 to 40 minutes until crust is nicely browned.
