Deep-Dish Apple Pie

- 10-inch (2-crust) pie pastry
- 5 c. sliced Granny Smith apples
- 1/2 c. boiling water
- 1 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cinnamon
- 2 Tbsp. butter
Directions

1Line pie plate with half of the pastry, rolled to 1/8-inch thickness.

2Set aside.

3Cook apples in water in a heavy covered pan 5 or 6 minutes, or until apples are about half cooked.

4Drain and cool.

5Preheat oven to 450°.

6Turn the apples into the pie plate.

7Mix the sugar, salt, nutmeg and cinnamon together. Sprinkle over apples and dot with butter.

8Roll out top crust. Place over apples; trim, turn under bottom crust and flute.

9Cut vents in top.

10Sprinkle with additional sugar.

11Bake 10 minutes before reducing oven to 350°.

12Bake 30 to 40 minutes until crust is nicely browned.
