Deep-Dish Peach Pie

  • 9 medium fresh California peaches (3 lb.)
  • 1/2 c. flour
  • 1/2 c. toasted almonds, chopped
  • pastry for 1-crust pie
  • 1 1/2 c. sugar
  • 1 tsp. nutmeg
  • 1/2 tsp. almond extract

Directions

    Peel and slice peaches to measure 6 cups.

    In bowl, combine sugar, flour and nutmeg.

    Add peaches, almonds and almond extract. Toss to coat thoroughly.

    Turn into 2-quart casserole dish.

    On lightly floured board, roll out pastry; cut into 1/2-inch wide strips.

    Arrange in lattice fashion over filling, moistening ends of strips and sealing to dish.

    Bake in 425° oven for 40 minutes or until crust is golden.

    Makes 6 to 8 servings.
