Ingredients

  • 1 cup white flour
  • 1 cup cornmeal
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 34 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 14 cup shortening, melted
  • 1 (14 ounce) can whole kernel corn, drained
  • 1 (14 ounce) can creamed corn
  • 1 cup vegetable oil

Directions

    Blend dry ingredients together and set aside.

    Beat eggs, add milk and melted shortening.

    Pour into dry mixture add canned corn and mix well.

    (If it seems too wet add a touch of flour).

    Pour the vegetable oil in your cast iron skillet and place it in the oven at 375 Watch it carefully and when a drop of water sizzles when you put it in pour the mix into the skillet.
