  • 5 lb. ground deer
  • 3 Tbsp. brown sugar
  • 2 tsp. black pepper
  • 1 tsp. hickory salt
  • 1/2 tsp. cumin powder
  • 4 tsp. liquid smoke
  • 2 lb. ground pork
  • 7 Tbsp. Tender Quick meat cure
  • 1 1/2 Tbsp. garlic powder
  • 1 1/2 Tbsp. onion powder
  • 2 tsp. hot pepper (cayenne)

Directions

    Mix deer and pork meats together.

    Mix all dry ingredients together, then add to meat mixture.

    Add liquid smoke.

    Mix well. Roll into loaves and cover.

    Refrigerate for 24 hours.

    Bake at 250° for 2 hours.

    Freeze loaves if not used right away.

    Unthaw and slice.
