Ingredients

  • 2 lb. ground deer or meat
  • 1/2 c. bread crumbs
  • 1 Tbsp. grated onion
  • 2 eggs, separated
  • 1 Tbsp. oleo
  • pepper to taste
  • 2 tsp. salt
  • 1 3/4 c. whipping cream
  • 1/2 Tbsp. oleo
  • 2 Tbsp. plain flour
  • 1 c. beef bouillon

Directions

    Fry onion in 1/2 tablespoon oleo, then add to meat with salt, pepper and egg yolks.

    Mix in cream and bread crumbs.

    Fold in stiffly beaten egg whites.

    Roll in small balls and saute until brown.

    May be frozen at this time.

    Make roux with 1 tablespoon oleo and flour.

    Add beef bouillon.

    Add meatballs to gravy, cover and simmer for 30 minutes.
