  • 1/2 lb. mozzarella cheese
  • 1 small heirloom tomato
  • 1 jalapeno
  • 1/2 tsp. sriracha
  • 1/4 c. coarsely chopped cilantro
  • 1/4 c. red onion
  • 1/4 c. mayonnaise
  • kosher salt
  • Freshly ground pepper
  • 4 slice bakery whole-wheat bread

Directions

    Preheat the broiler with the rack 6 inches from the heat.

    In a bowl, mix all of the ingredients except the salt, pepper, and toast; season with salt and pepper.

    Spread the cheese mixture onto the toasts and arrange on a baking sheet.

    Broil for 3 to 5 minutes, until the cheese melts.
