Ingredients

  • 1/2 pounds, 7/8 ounces, weight Butter (2 Cups + 2.5 Tbls)
  • 7 ounces, weight White Sugar (3/4 Cup + 4 Tbls)
  • 3/4 pounds, 2-1/8 ounces, weight Flour (1 3/4 Cups)
  • 1 whole Lemon
  • 3 whole Eggs, Separated
  • 10 whole Green Apples
  • 2 Tablespoons Cinnamon
  • 3 Tablespoons Light Brown Sugar
  • 1 cup Seedless Raisins

Directions

    Cream the butter and 200 grams minus three tablespoons of white sugar.

    Add flour, lemon juice and rind and three egg yolks and work to form a compact dough. Set aside.

    Peel and grate the apples and toss in a large bowl with the cinnamon, brown sugar and raisins.

    Roll out half the dough and line a well greased rectangular pan (about 30 cm by 20 cm).

    Add the apple mixture and roll out the rest of the dough to cover the apple filling.

    Cook in a moderate oven for about twelve to fifteen minutes, or until just beginning to turn brown on the top.

    Meanwhile beat the egg whites with the three tablespoonfuls of white sugar until stiff.

    Spread over the top of the pastry and pop under the broiler for a couple of minutes until golden brown.

    Remove from the oven and allow to cook before cutting in squares to serve.
