- 2 1/2 to 3 lb. chicken (fryer)
- salt
- 1 c. water
- 1 c. butter
Directions

1Grease casserole or roaster with butter.

2Dredge chicken with flour as for frying.

3Put chicken with skin side down in roaster. Salt and add water and butter.

4Put into 450° oven and brown. When brown, remove from oven and turn.

5Brown this side and if all water has cooked out.

6Add a little more.

7When brown, put top on. Turn oven down to 200° and let simmer for about 40 minutes.
