- 4 c. rhubarb, cut in 1/2-inch chunks
- 1 egg, slightly beaten
- 1 1/2 c. sugar
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1 unbaked pie shell
Directions

1Combine and mix well the egg, sugar, flour and salt.

2Arrange rhubarb in unbaked pie shell, spread egg mixture over rhubarb. Pat down.

3Then top crust.

4Bake at 425° for 25 minutes.
