- 3 lbs chicken, cut up
- salt and pepper
- 4 tablespoons butter
- 1 teaspoon Dijon mustard
- 1 teaspoon red wine vinegar
- 1/2 teaspoon paprika
- 3/4 cup breadcrumbs
Directions

1Season chicken liberally with salt and pepper.

2Broil 6-8 inches from heat for 5-7 minutes per side, until skin is browned.

3Remove from broiler and reduce oven to 350.

4In a small bowl, blend butter, mustard, vinegar, paprika and 1/2 teaspoon salt.

5Place chicken, skin side up in a large baking dish.

6Brush with seasoned butter. Sprinkle bread crumbs over chicken.

7Bake 15-20 minutes, until cating is browned and chicken is tender.
