- 4 Tbsp. butter (at room temperature)
- 1 Tbsp. Dijon mustard
- 1 Tbsp. apple cider vinegar
- 1/2 tsp. salt
- 1 tsp. sweet paprika
- 1 chicken (3 1/2 to 4 lb.), well rinsed, patted dry and quartered
- 1/2 c. fine, dry bread crumbs
Directions

1Combine the butter, mustard, vinegar, salt and paprika in a small bowl.

2Rub the mixture all over the chicken and under the skin without detaching it completely.

3Refrigerate, covered, for 4 to 6 hours.
