  • 2 eggs or equivalent egg substitute
  • 1 c. sour cream (I use yogurt)
  • 1/2 c. salad oil (I use canola)
  • 1 c. canned cream-style corn
  • 1 c. cornmeal
  • 1 1/2 tsp. salt (I use less)
  • 3 tsp. baking powder

Directions

    Beat eggs.

    Blend in sour cream, oil and corn.

    Blend cornmeal, salt and baking powder.

    Add to first mixture.

    Blend well and pour into oiled 8-inch square pan.

    Bake in 375° oven 30 to 45 minutes.
