Ingredients
- 3 qt. turkey broth
- 3 or 4 c. turkey chunks
- 2 large onions, chopped
- 1/2 c. pearl onions
- small can tomato paste
- 6 stalks celery, chopped
- 2 Tbsp. parsley
- salt and pepper to taste
Directions

1Simmer broth and turkey for 1 hour. Add onions, celery, parsley, salt and pepper.

2Simmer 30 minutes or until vegetables are tender.

3The next day, add tomato paste and rice to remaining soup.

4Simmer 20 minutes.
