  • 2 tablespoons butter
  • 14 cup mayonnaise
  • 14 cup sour cream
  • 3 tablespoons spicy brown mustard or 3 tablespoons Dijon mustard
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon mustard powder
  • salt, to taste
  • ground black pepper, to taste
  • 8 boneless skinless chicken breasts or 8 boneless skinless chicken thighs

    Preheat oven to 375F Grease a rimmed baking sheet.

    Melt butter in microwave or in small saucepan.

    Thoroughly combine butter with mayonnaise, sour cream and mustard in a wide dish.

    In another dish, stir together bread crumbs with garlic powder, paprika, mustard powder, salt and pepper.

    Season chicken breasts with more salt and pepper.

    Dip both sides in mustard mixture, then press firmly into bread crumbs, packing crumbs onto chicken.

    Place chicken onto prepared sheet pan and bake in preheated oven 35-45 minutes or until internal temperature is 155F, turning over half-way through.

    Let rest 10 minutes before serving (internal temp should rise to 160F).
