- 8 chicken thighs
- 4 chicken leg quarters
- 1/4 cup onions
- scallions, chopped
- 1/4 tsp. cayenne, ground
- 1/4 cup dijon mustard
- Salt and pepper, to taste
- Parsley, chopped, to taste
Directions

1Preheat the broiler and set rack about 4-inches from the heat.

2Season with salt and pepper then broil skin side up until chicken is golden, about 5 minutes (8 for chix leg quarters).

3Combine mustard, shallots and cayenne.

4After skin is browned, turn chicken and spread with mustard mixture on underside.

5Broil chicken 5 (10 for chicken leg quarters) minutes more.

6Spread remaining mustard mixture on upper or skin side.

7Broil until mustard begins to brown, about 10 minutes more.

8Test for doneness.

9If the meat is not done, turn off the broiler and let rest in the oven for 5 more minutes.
