- 10 hard-boiled large eggs
- 1/4 c. spicy brown mustard
- 3 Tbsp. mayonnaise
- 1 tsp. white wine vinegar
- 1/4 tsp. Tabasco
- 3 Tbsp. minced fresh parsley leaves
- 1 Tbsp. drained bottled capers
- 2 to 3 Tbsp. water
Directions

1Halve the eggs lengthwise.

2Force the yolks through a sieve into a bowl and stir in the mustard, the mayonnaise, the vinegar, the Tabasco, the parsley and the capers.

3Stir in enough of the water to reach the desired consistency.

4Add salt and pepper to taste.
