- 1 lb. pork cutlets (6 to 8)
- 3 Tbsp. Dijon mustard
- 1/3 c. packaged seasoned dry bread crumbs
- 3 Tbsp. vegetable oil
- lemon wedges (optional)
Directions

1Brush pork cutlets with mustard on both sides.

2Coat with bread crumbs.

3Heat 1 tablespoon oil in a large, preferably nonstick skillet, until hot, but not smoking.

4Fry cutlets in 2 batches, 2 minutes per side, until golden brown, adding more oil as needed.

5Serve with lemon wedges.
