  • 8 chicken thighs
  • 2 tablespoons sugar
  • 1 tablespoon ground ginger
  • 1 tablespoon English mustard powder
  • 1 tablespoon curry powder
  • 2 ounces butter
  • 23 cup tomato ketchup
  • 1 tablespoon curry sauce
  • 2 tablespoons soy sauce

Directions

    Place the chicken portions on a board.

    Mix the sugar, ginger, mustard and curry powder together.

    Rub well into the surface of the chicken.

    Leave for 2 hours.

    Arrange the chicken on a grid in 2 roasting pans.

    Melt the butter and brush all over the chicken.

    Bake in a preheated moderately hot oven, 400F for 30 minutes, until golden brown.

    Mix the ketchup and sauces together and brush over the chicken portions.

    Return to the oven for 10 minutes.
