- 8 chicken thighs
- 2 tablespoons sugar
- 1 tablespoon ground ginger
- 1 tablespoon English mustard powder
- 1 tablespoon curry powder
- 2 ounces butter
- 23 cup tomato ketchup
- 1 tablespoon curry sauce
- 2 tablespoons soy sauce
Directions

1Place the chicken portions on a board.

2Mix the sugar, ginger, mustard and curry powder together.

3Rub well into the surface of the chicken.

4Leave for 2 hours.

5Arrange the chicken on a grid in 2 roasting pans.

6Melt the butter and brush all over the chicken.

7Bake in a preheated moderately hot oven, 400F for 30 minutes, until golden brown.

8Mix the ketchup and sauces together and brush over the chicken portions.

9Return to the oven for 10 minutes.

10Arrange on a warmed serving dish and serve immediately.
