Ingredients

  • 2 1/2 c. water
  • 2 c. unsweetened applesauce
  • 2 Tbsp. Sweet 'N Low
  • 3 c. self-rising flour
  • 2 Tbsp. vanilla
  • 2 1/2 c. raisins
  • 3 eggs
  • 1 1/2 c. cooking oil
  • 3 tsp. cinnamon
  • 1/4 tsp. soda

Directions

    Cook raisins in water until all the water is boiled out.

    Add the applesauce, sweetener, oil and eggs.

    Mix well.

    Blend in the flour, soda, cinnamon and vanilla.

    Pour the mixture into greased and floured Bundt pan.

    Bake at 350° for 30 to 35 minutes or until cake is done.

    (I use 3 small deep pans.)
