Ingredients

  • 1 c. flour
  • 1/4 tsp. salt
  • 1/2 c. sugar substitute
  • 2 to 3 c. raisins
  • 1/2 c. figs
  • 1 tsp. cinnamon
  • 1/4 c. liquid (unsweetened fruit juice, skim milk or coffee)
  • 3/4 tsp. baking powder
  • 1/2 c. liquid shortening
  • 2 to 3 c. dates
  • 2 to 3 c. nuts
  • 2 eggs
  • 1/2 tsp. nutmeg

Directions

    Mix dry ingredients (sift together) and add beaten eggs and oil to dry mixture and juice.

    Then add fruit and nuts.

    Bake in a loaf pan in a 300° oven for 45 minutes.

    This makes 18 slices, each of which equals 1 fat, 1 bread and 1/2 fruit.
