- 1/4 c. margarine
- 2 Tbsp. brown sugar
- 2 Tbsp. molasses
- 1 egg
- 1 1/4 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 tsp. ginger
- 3/4 tsp. cinnamon
- 1/4 tsp. cloves
- 1/2 c. orange juice
- 1 Tbsp. finely grated orange peel
Directions

1In mixing bowl, cream together margarine and brown sugar.

2Add molasses and egg.

3In separate bowl, stir together flour, baking soda, baking powder, salt, ginger, cinnamon and cloves. Alternately add flour mixture and orange to margarine and brown sugar mixture, beginning and ending with flour.

4Mix in grated orange peel.

5Pour batter into oiled and floured 8 x 8-inch baking pan.

6Bake at 350° for 30 to 35 minutes.

7Let cool 20 minutes in pan.

8Use lite Cool Whip for topping.
