  • 1 (4 serving size) pkg. Jell-O sugar-free gelatin (any flavor)
  • 3/4 c. boiling water
  • 1/2 c. cold water or substitute with 1/2 c. fruit juice
  • 1 (8 oz.) container vanilla low-fat yogurt
  • 1/2 tsp. vanilla (optional)
  • ice cubes

    dissolve gelatin in boiling water. Combine cold water

    and enough ice

    cubes

    to measure 1 cup.

    Add to gelatin and

    until slightly

    thickened.

    Remove

    any unmelted ice.

    Stir in yogurt and vanilla.

    Pour into individual dishes and chill until set, about 30 minutes. Makes 2 1/2 cups of 5 servings.
