  • 2 c. raisins
  • 2 c. water
  • 1 c. unsweetened applesauce
  • 1 c. nuts
  • 2 Tbsp. liquid sweetener
  • 2 eggs
  • 3/4 c. cooking oil
  • 2 c. self-rising flour
  • 1 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 1/2 tsp. cinnamon

Directions

    Cook raisins in water until dry; let cool.

    Add applesauce, sweetener, eggs and oil.

    Blend in 2 cups of flour, vanilla, spices and nuts.

    Bake in a 350° oven for 40 to 50 minutes in a tube pan or 30 minutes in a large loaf pan.
