  • 1 1/4 c. graham cracker crumbs
  • 5 Tbsp. plus 1 tsp. melted diet margarine
  • 2 pkg. diet instant pudding of choice
  • 2 (20 oz.) cans crushed pineapple (undrained)
  • 1 Tbsp. lemon juice
  • 1 c. light Cool Whip
  • 8 Tbsp. coconut

Directions

    Mix graham cracker crumbs and margarine; spread in a 9 x 13-inch ungreased pan.

    Bake at 350° for 5 to 7 minutes.

    Cool. Mix packages of pudding (dry), pineapple with juice, lemon juice and Cool Whip; spread over graham cracker crust.

    Sprinkle with coconut.
