Ingredients

  • 2 teaspoons olive oil
  • 1 diced onion
  • 2 -3 boneless skinless chicken breast halves
  • 1 small red pepper
  • 14 ounces fat free sodium free chicken broth
  • 2 cups water
  • 1 rutabaga
  • 1 carrot
  • 3 stalks celery
  • 2 cups frozen green beans
  • 14 ounces no-salt-added diced tomatoes
  • 1 bouillon cube
  • 14 teaspoon garlic powder
  • 12 teaspoon black pepper

Directions

    In a soup pot add olive oil, onion, chicken, red pepper and cover over a medium low heat, stir occasionally.

    Dice rutabaga in very small cubes 1/2 inchx1/2 inch after removing the waxy outside.

    Peel and dice carrot.

    Once chicken starts to cook through, add in remaining indgredients.

    Cover, let simmer for 1 hour.

    Pull out chicken and shred or cube as desired then add back into the pot.

    Serve.
