- 2 medium cans sweet potatoes
- 1 medium can apricot halves
- 1/2 c. pecan halves (more if desired)
- 1 c. brown sugar
- 1 1/2 Tbsp. cornstarch
- 1 tsp. orange rind
- 1/4 tsp. cinnamon
- 1 1/4 c. apricot juice
- 2 Tbsp. butter/margarine
Directions

1Drain potatoes and apricot juice (save enough to make 1 1/4 cup liquid).

2Dice potatoes into bite size pieces.

3Arrange in layers of potatoes, apricots and nuts.

4Mix dry ingredients in saucepan.

5Over low heat, slowly add apricot juice.

6Stir until thick.

7Add margarine and pour over layered ingredients.

8Heat 25 to 35 minutes at 375° (9 x 13-inch casserole).

9Serves 10 to 12.
