- 4 medium beets
- 1 tablespoon Dijon mustard
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
Directions

1Wash beets.

2Cut off tops.

3Put beets in a pot with water to cover them.

4(If desired, you can also wash the beet tops and cook them in the same pot with the beets for another meal-they are wonderful!) Bring beets to a boil, covered.

5Cook until tender when pierced with a fork.

6Drain and cool.

7Slice beets into 1/4 inch slices.

8Combine remaining ingredients.

9Pour over beets.

10Stir to combine.

11Serve warm or let marinate in the fridge for a couple hours.
