Dijon Creamed Spinach

- 1/4 cup butter or 1/4 cup margarine
- 1/2 cup chopped white onion
- 3 garlic cloves, minced
- 1/4 cup white wine
- 3 tablespoons flour
- 1 1/2 cups evaporated milk
- 1/4 cup Dijon mustard
- 1/8 - 1/4 teaspoon ground black pepper
- salt, to taste
- 2 (10 ounce) packages frozen chopped spinach, thawed, squeezed dry
Directions

1In large saucepan on medium-high heat, melt butter; add onion and garlic; cook and stir until onion is crisp-tender. Add wine; simmer 5 minute

2Stir in flour until well blended. Gradually add milk, stirring until well blended. Cook until mixture thickens and begins to boil, stirring constantly. Allow to boil for 1 minute.

3Add mustard, pepper, and salt. Stir in spinach; cook until heated through, stirring occasionally.
