  • 1 lb. market beans
  • 6 c. boiling water
  • 3 1/2 tsp. pickling salt
  • 1 c. white sugar
  • 1 c. vinegar
  • 1 c. liquid from beans
  • dill and garlic clove

    Wash, string and drain beans; place in large kettle with boiling water and 1 1/2 teaspoons pickling salt.

    Boil 20 minutes. Drain.

    Save 1 cup liquid.

    Combine vinegar, bean liquid and 2 teaspoons pickling salt in kettle.

    Bring to a boil.

    Pack beans and a pinch of dill and garlic in hot jars; fill with hot vinegar mixture and seal.

    Makes 2 pints.
