- 3 lb. whole green beans
- 1 1/2 tsp. cayenne pepper
- 6 garlic cloves
- 6 dill heads or 2 Tbsp. dill seed
- 3 1/4 c. vinegar
- 3 1/4 c. water
- 6 Tbsp. salt
Directions

1Wash beans; cut off ends.

2Pack lengthwise in clean, hot pint jars, leaving 1/4-inch headroom.

3Add 1 clove garlic, 1 head of dill (or 1 teaspoon dill seed) and 1/4 teaspoon cayenne pepper to each pint jar.

4Mix together in an enamel kettle the water, vinegar and salt.

5Bring to a boil and pour, boiling hot, over the beans in the jars.

6Leave 1/4-inch of headroom.

7Adjust the lids and process in a boiling water bath (212°) for 10 minutes.

8Makes about 6 pints.

9It takes about 2 weeks for full flavor to develop.

10(The added vinegar raises the naturally low acid beans to the strong acid category, so a boiling water bath is adequate for safe processing.)
