  • 2 lbs potatoes, peeled and cubed
  • 2/3 cup cottage cheese
  • 1/3 cup shredded cheddar cheese
  • 2 teaspoons butter
  • 2 teaspoons fresh dill or 1/2 teaspoon dill weed
  • 1/2 teaspoon salt

Directions

    Place potatoes in a large saucepan and cover with water; cover and bring to a boil over medium-high heat.

    Cook for 15-20 minutes or until tender, drain.

    Transfer to a large mixing bowl, add cheeses, butter, dill and salt; beat until smooth and fluffy.
