Pickled Shrimp

  • 2 1/2 lb. fresh or frozen shrimp
  • 1/2 c. celery tops
  • 3 1/2 tsp. salt
  • 1/4 c. mixed pickling spices (tied in a piece of cheesecloth)

    Cover shrimp with boiling water; add celery tops, spices and salt.

    Cover and simmer 5 to 7 minutes.

    Drain, cool with cold water.

    Peel and devein under cold water.
