Dilled Pulled Beef Sandwiches

Ingredients

  • 3 lb. boneless beef chuck
  • 1 jar (8 oz.) dilled pickles
  • 1 bottle (8 oz.) BBQ sauce (or homemade)
  • 1 tbsp. garlic powder
  • 1 tsp. thyme
  • cumin
  • Salt and pepper, to taste

Directions

    Season roast with seasonings and place in a crockpot.

    Put in just enough water to cover roast.

    Add half of the jar of pickles including juice.

    Cook on low until meat is tender and shreds easily, about 6 hours.

    Drain and shred beef, discarding pickles.

    Place beef back into pot.

    Add all of the BBQ sauce and the rest of the jar of pickles.

    Simmer for 45-60 minutes on low, stirring occasionaly.

    Serve on toasted kaiser rolls, with additional BBQ sauce and new, crisp pickles and horseradish sauce.
