Dilled Trout

  • 2 lb. pan-dressed trout
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. butter
  • 2 tsp. dill weed
  • 3 Tbsp. lemon juice

Directions

    Clean, wash and dry fish.

    Cut fish almost through lengthwise and spread open.

    Sprinkle with salt and pepper.

    Melt butter in frypan.

    Add dill weed.

    Place fish in a single layer, flesh side down, in the hot dill butter.

    Fry at moderate heat for 2 or 3 minutes.

    Turn.

    Fry 2 or 3 minutes longer until fish flakes easily.;

    Place fish on platter; keep warm.

    Turn heat very low and stir in lemon juice.

    Pour sauce over fish.
