- 2 lb. pan-dressed trout
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. butter
- 2 tsp. dill weed
- 3 Tbsp. lemon juice
Directions

1Clean, wash and dry fish.

2Cut fish almost through lengthwise and spread open.

3Sprinkle with salt and pepper.

4Melt butter in frypan.

5Add dill weed.

6Place fish in a single layer, flesh side down, in the hot dill butter.

7Fry at moderate heat for 2 or 3 minutes.

8Turn.

9Fry 2 or 3 minutes longer until fish flakes easily.;

10Place fish on platter; keep warm.

11Turn heat very low and stir in lemon juice.

12Pour sauce over fish.
