- 2 lbs. young, slender, straight green beans
- 2-1/2 c. water
- 2-1/2 c. white vinegar
- 1/4 c. pickling salt
- 4 sprigs of fresh dill
- 4 garlic cloves, peeled and flattened
- 1/2 tsp. red pepper flakes
Directions

1Wash 4 pt. jars and keep them hot until needed.

2Prepare lids per manufacturers directions.

3Wash beans; trim stem ends so beans are 1/2 inch shorter than jars.

4Combine water, vinegar and pickling salt in a saucepan and bring to a boil.

5Keep hot.

6In each hot jar, place 1 dill sprig, 1 garlic clove and 1/8 tsp. red pepper flakes.

7Pack beans lengthwise in 1 jar at a time.

8Add hot vinegar mixture to cover, leaving 1/2 inch headspace.

9Release trapped air by slipping a plastic knife between the beans and the side of the jar.

10Wipe jar rim with a clean, damp cloth.

11Attach lid.

12Fill and close remaining jars.

13Process in a boiling water bath 5 minutes.
