    Prepare potato; in a large bowl, sprinkle yeast in warm water. In separate bowl, blend egg and sugar, add potato, milk, butter and salt; add to yeast mixture.

    Thoroughly beat in two cups flour. Gradually add remaining flour 1/2 cup at a time.

    Turn out onto lightly floured surface and knead until smooth and satiny (about eight minutes).

    Put into lightly greased bowl and cover tightly with plastic wrap; allow to double in bulk (about 1 to 1 1/2 hours).

    Cut dough in 16 to 24 pieces for forming.

    Set formed rolls on greased baking sheet and allow to rise 30 to 40 minutes. Bake at 400° for 12 to 16 minutes, brush with melted butter.
