Ingredients

  • 1 (6 oz.) box chopped livers
  • 1 (6 oz.) box chopped gizzards
  • 1 lb. ground beef or 1/2 lb. beef and 1/2 lb. pork
  • 1/2 c. shortening
  • 1 c. bell pepper, chopped
  • 1 c. onions, chopped
  • 1 c. celery, chopped
  • 2 cloves garlic, chopped
  • salt and pepper
  • 1 lb. or 2 c. rice, cooked

    Parboil livers and gizzards in 3 cups water.

    Keep stock. Simmer ground meat in shortening for 20 minutes. Add livers, gizzards, chopped vegetables and seasonings.

    Cook 20 more minutes. Add 2 cups stock and simmer for 20 minutes. Add and mix in rice when ready to serve. Serves 12.
