Ingredients

  • 1/2 c. butter or margarine
  • 1/2 lb. hot pork sausage
  • 1 lb. chicken livers
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 green onions, chopped
  • 2 ribs celery, chopped
  • 2 tsp. salt
  • 1/4 tsp. sage
  • 1 bay leaf
  • 2 cans chicken broth
  • 2 c. uncooked rice

    Cook rice as directed on package and set aside.

    Saute chicken livers.

    Cool and chop fine.

    In heavy pan, cook sausage for 5 minutes.

    Add vegetables and cook until onions are transparent. Add salt, sage and chicken broth.

    Simmer for 30 minutes over low heat.

    Add chicken livers and remove from heat.

    Mix well.

    Cover and let set for 20 minutes.

    Serve hot.
