Ingredients
- 1/2 c. butter or margarine
- 1/2 lb. hot pork sausage
- 1 lb. chicken livers
- 1 large onion, chopped
- 1 bell pepper, chopped
- 3 green onions, chopped
- 2 ribs celery, chopped
- 2 tsp. salt
- 1/4 tsp. sage
- 1 bay leaf
- 2 cans chicken broth
- 2 c. uncooked rice
Directions

1Cook rice as directed on package and set aside.

2Saute chicken livers.

3Cool and chop fine.

4In heavy pan, cook sausage for 5 minutes.

5Add vegetables and cook until onions are transparent. Add salt, sage and chicken broth.

6Simmer for 30 minutes over low heat.

7Add chicken livers and remove from heat.

8Mix well.

9Cover and let set for 20 minutes.

10Serve hot.
