Dirty Rice Dressing

Ingredients

  • 1 lb. ground beef (chuck)
  • 1/2 to 3/4 lb. giblets, boiled and ground
  • 2 onions, finely chopped
  • 1/2 c. bell pepper, chopped
  • salt, pepper (red and black) or Creole seasoning
  • 1 c. ground onions
  • 3 c. cooked white rice, cooked in chicken stock
  • 1 lb. ground pork
  • 1 c. celery, finely chopped
  • 1/2 c. parsley, chopped

Directions

    Brown beef and pork in small amount of oil.

    Add chopped white onions, celery and bell pepper in meat and cook 20 to 30 minutes, adding a little chicken stock to keep from sticking.

    Add rice, giblets, seasonings, ground onions and parsley.

    Cook a few minutes more to mix well.

    Add enough chicken stock to make mixture moist.

    Put into baking pan or casserole dish and bake uncovered about 45 minutes.
