  • 1 gal. cucumbers
  • 3 c. vinegar
  • 2 c. sugar
  • 1 Tbsp. pickling spice

Directions

    Mix vinegar, sugar and spices in a large pan.

    Peel the cucumbers and cut into quarters (lengthwise).

    Remove seeds from cucumbers (a grapefruit spoon is ideal for this job!).

    Cut the extra long pieces in half.

    Add the cucumbers to the vinegar-sugar mixture.

    Bring to a boil and cook for 10 to 15 minutes or until they seem a little soft (being careful not to overcook them as they will become mushy).

    Pack in jars and cover with hot liquids. Seal.
