  • 2 1/2 c. sugar
  • 2/3 c. light corn syrup
  • 1/2 c. water
  • 2 egg whites, stiffly beaten
  • 1/2 tsp. vanilla (I prefer white vanilla)

    Cook sugar, syrup and water until the syrup is hard when tested in cool water (hard crack stage).

    I usually tap it on the side of the cup I am testing it in.
